The Institut Paul Bocuse, management school specialized in hospitality, restauration and culinary art, branches out his competence area : a new research centre has opened, with the mission of giving back the real identity of the food and also of building a new vision of the feeding. In partnership with the Centre de Recherche en Nutrition Humaine (CRNH) and the universities, the Institut Paul Bocuse associates his know-how with the one of the researchers in a true multidisciplinary approach: nutrition, culinary arts, sensory evaluation, sociology, psychology, linguistic, arts of the table, design, marketing, consumer behavior, economy …
The core activity of the Research Centre is the study of Alimentation and eating behaviours, three themes have been emphasized: taste-pleasure; health – well being; economy.
